  • 2 1/2 cups all-purpose flour

  • 1 tsp salt

  • 1 tbsp sugar (optional, for slight sweetness)

  • 1 cup (2 sticks) unsalted butter, cold and cubed

  • 6–8 tbsp ice water

  • 6–7 medium apples, peeled and sliced (Granny Smith + Honeycrisp is a good combo)

  • 3/4 cup granulated sugar

  • 1/4 cup brown sugar

  • 2 tbsp all-purpose flour

  • 1 1/2 tsp ground cinnamon

  • 1/4 tsp nutmeg

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • 1 tbsp cold butter, cut into small pieces (for dotting the filling)

  • 1 egg (for egg wash)

  • 1 tbsp milk or water

  • Coarse sugar (optional, for sprinkling)

πŸ₯£ Step 1: Make the Crust

  1. Mix flour, salt, and sugar in a large bowl.

  2. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.

  3. Add ice water 1 tbsp at a time until dough just comes together.

  4. Divide dough in half, flatten into discs, wrap, and chill for 1 hour.

  1. In a large bowl, toss apple slices with sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla.

  2. Let sit for 10–15 minutes to draw out juices.

  1. Roll out one disc of dough and fit it into a 9-inch pie plate.

  2. Fill with apple mixture and dot with cold butter.

  3. Roll out second dough disc and place over the top. Trim excess and crimp edges.

  4. Brush crust with egg wash (egg beaten with 1 tbsp milk or water).

  5. Sprinkle with coarse sugar if desired.
