🐟 Baked Salmon in Foil with Asparagus & Lemon Garlic Butter Sauce

🍋 Ingredients (Serves 2–3):

Main:

  • 2 salmon fillets (about 6 oz each)

  • 1 bunch of thin asparagus, ends trimmed

  • 2 tbsp olive oil or melted butter

  • Salt and black pepper to taste

  • Lemon slices (for topping)

  • Foil sheets (large enough to wrap the salmon and veggies)

Lemon Garlic Butter Sauce:

  • 3 tbsp unsalted butter, melted

  • 2–3 cloves garlic, minced

  • Juice of 1/2 lemon

  • Zest of 1/2 lemon

  • 1 tsp Italian seasoning (or mix of oregano, thyme, parsley)

  • Optional: a pinch of crushed red pepper flakes


🔪 Instructions:

1. Preheat Oven:

  • Preheat to 400°F (200°C).

2. Prepare Foil Packets:

  • Place a large piece of foil on a baking sheet.

  • Lay asparagus in the center and drizzle with olive oil; season with salt and pepper.

  • Place a salmon fillet on top of the asparagus.

3. Make the Lemon Garlic Butter Sauce:

  • In a bowl, mix melted butter, garlic, lemon juice, zest, and Italian seasoning.

  • Spoon the sauce generously over the salmon.

4. Wrap and Bake:

  • Place lemon slices on top of the salmon.

  • Fold the foil over the salmon and asparagus to create a sealed packet.

  • Bake for 15–18 minutes, depending on salmon thickness.

5. Unwrap & Broil (Optional):

  • For a golden finish, carefully open the foil and broil for 2–3 minutes on high.


🍽️ Serve:

  • Serve hot with extra lemon wedges and fresh herbs if desired.

  • Great with rice, quinoa, or crusty bread to soak up the sauce.
