Sure! Here’s a classic and easy Slow Cooker Beef Stew recipe—hearty, flavorful, and perfect for busy days.


🍲 Slow Cooker Beef Stew

Prep time: 15 minutes
Cook time: 7–8 hours (low) or 4–5 hours (high)
Servings: 6

Ingredients:

  • 2 lbs (900g) beef stew meat, cut into 1-inch cubes

  • 3 tbsp flour

  • Salt and pepper to taste

  • 3 tbsp olive oil (optional, for browning)

  • 4 carrots, sliced

  • 3 potatoes, diced

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 3 cups beef broth

  • 2 tbsp tomato paste (or 1/4 cup tomato sauce)

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

  • 1 cup frozen peas (optional, stirred in at the end)


Instructions:

  1. (Optional) Brown the meat:
    Toss beef cubes in flour, salt, and pepper. Brown in a skillet with olive oil over medium-high heat (3–4 mins per side). This step adds flavor but can be skipped.

  2. Load the slow cooker:
    Add the beef, carrots, potatoes, onion, and garlic to the slow cooker.

  3. Mix liquids and seasoning:
    In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour over the meat and veggies.

  4. Cook:

    • Low: 7–8 hours

    • High: 4–5 hours
      Until meat is tender and veggies are cooked through.

  5. Final touches:
    About 30 minutes before serving, add the peas (if using). Taste and adjust salt/pepper as needed. Remove bay leaf before serving.

  6. Serve:
    Enjoy with crusty bread or over rice!
