Here’s a Mississippi Mud Potatoes recipe — rich, cheesy, creamy, and packed with bacon. This indulgent Southern-style potato casserole is perfect as a hearty side dish for BBQs, potlucks, or any comfort food meal.

🛒 Ingredients

  • 2 lbs (about 4 medium) russet potatoes, peeled and diced into ½-inch cubes

  • 1½ cups shredded cheddar cheese

  • 1 cup sour cream

  • ½ cup mayonnaise (or more sour cream)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt (to taste)

  • ½ tsp black pepper

  • 6 slices bacon, cooked and crumbled

  • 3 green onions, thinly sliced

  • Optional: extra cheese and bacon for topping


👩‍🍳 Instructions

1. Preheat Oven

  • Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.


2. Prep Potatoes

  • Dice potatoes into small, even cubes for faster cooking.

  • Boil in salted water for 8–10 minutes, or until just fork-tender but not falling apart.

  • Drain well.


3. Mix Filling

  • In a large bowl, combine:

    • Sour cream

    • Mayonnaise

    • Cheddar cheese

    • Garlic powder, onion powder, salt, and pepper

    • Crumbled bacon (reserve a little for topping if desired)

    • Green onions

  • Fold in the cooked potatoes until everything is coated.


4. Assemble & Bake

  • Transfer mixture to the prepared baking dish.

  • Sprinkle with a little extra cheese and bacon on top if desired.

  • Bake uncovered for 35–40 minutes, or until hot and bubbly with golden cheese on top.


5. Serve

  • Let cool slightly and garnish with extra green onions.

  • Serve as a side with grilled meats, fried chicken, burgers, or as a standalone indulgent dish.


🧀 Optional Add-ins

  • Jalapeños for heat

  • Cream cheese for extra richness

  • Smoked paprika or hot sauce for depth

  • Diced ham or sausage to turn it into a full meal
