Ingredients:

  • 8–10 thick sausages (beef, pork, or chicken β€” your choice)

  • 1 onion, sliced

  • 2 carrots, sliced

  • 1–2 potatoes, diced (optional)

  • 1 cup frozen peas

  • 2 garlic cloves, minced

  • 1 tbsp curry powder (use mild or hot based on preference)

  • 2 tbsp tomato paste

  • 2 tbsp all-purpose flour

  • 2 cups beef or chicken stock

  • 1 tbsp Worcestershire sauce

  • 1 tsp sugar (optional β€” balances flavor)

  • Salt & pepper, to taste

  • 1 tbsp oil (for browning sausages)


Instructions:

  1. Brown the sausages (optional, but recommended):

    • Heat oil in a skillet over medium heat. Brown sausages for a few minutes until golden all over (they don’t need to be cooked through).

    • Set aside to cool slightly, then slice into large chunks or leave whole.

  2. Add ingredients to slow cooker:

    • Place onions, carrots, potatoes (if using), and garlic in the base.

    • Add the sausages on top.

  3. Mix the curry gravy:

    • In a bowl, whisk together curry powder, tomato paste, flour, stock, Worcestershire sauce, sugar, and a pinch of salt and pepper.

    • Pour over the sausages and veggies.

  4. Cook:

    • Low: 6–8 hours

    • High: 3–4 hours

    • Add peas in the last 30 minutes of cooking.

  5. Optional – Thicken the sauce:

    • If you prefer a thicker gravy, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) and cook for another 10–15 minutes on high.

  6. Serve:

    • Over mashed potatoes, rice, or with crusty bread. Garnish with parsley if you like.
