Crock Pot Roast

πŸ₯˜ Classic Crock Pot Roast Recipe

Ingredients:

  • 3–4 lb chuck roast (or similar cut: rump, shoulder)

  • 4–5 carrots, peeled and cut into chunks

  • 4–5 potatoes, cut into large chunks (Yukon gold or red potatoes work well)

  • 1 onion, cut into large wedges

  • 3 cloves garlic, minced

  • 2 cups beef broth (or 1 cup broth + 1 cup red wine for extra flavor)

  • 2 tbsp tomato paste (optional, for depth)

  • 1 tbsp Worcestershire sauce

  • 2 tsp salt

  • 1 tsp black pepper

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 2 tbsp olive oil (for searing)


Instructions:

  1. Sear the Roast (optional but recommended):

    • Heat olive oil in a large skillet over medium-high heat.

    • Season roast with salt and pepper.

    • Sear the roast on all sides (2–3 min per side) until browned.

    • Transfer to the slow cooker.

  2. Layer the Veggies:

    • Place carrots, potatoes, and onion in the bottom of the crock pot.

    • Add minced garlic.

  3. Add the Roast:

    • Set the seared roast on top of the vegetables.

  4. Make the Sauce:

    • In a bowl, whisk together beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary.

    • Pour over the roast and vegetables.

  5. Cook:

    • Low: 8–10 hours

    • High: 4–6 hours
      (Low is better for tender meat.)

  6. Serve:

    • Remove the roast and veggies.

    • Optional: Use the leftover juices to make a quick gravy.


Optional Gravy:

  1. Strain juices into a saucepan.

  2. Mix 2 tbsp cornstarch with 1/4 cup cold water, whisk into the juices.

  3. Simmer until thickened.
