1๏ธโƒฃ Crispy Rolled Taquitos

๐Ÿ“ Ingredients:

  • 2 cups cooked, shredded chicken or beef (or use black beans for vegetarian)

  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a mix)

  • 1/4 cup salsa or enchilada sauce (optional, for moisture)

  • 12 small corn tortillas (6-inch)

  • Oil, for frying or baking

  • Salt, to taste

  • Mix shredded meat (or beans), cheese, and salsa or sauce in a bowl.

  • 4 ripe tomatoes, diced

  • 1/4 cup diced red onion
