Here’s a hearty and comforting recipe for Fideo with Potatoes and Ground Beef — a simple, flavorful Mexican-style dish that’s perfect for a quick family meal.


🌮 Fideo with Potatoes and Ground Beef

🕐 Ready in: 35–40 minutes

🍽️ Serves: 4–6 people


📝 Ingredients:

  • 1 (7 oz) package of fideo noodles (or broken-up vermicelli)

  • 1/2 lb – 1 lb ground beef (depending on how meaty you want it)

  • 1 medium russet potato, peeled and diced

  • 1/2 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 (8 oz) can tomato sauce

  • 3 cups chicken broth (or water + bouillon)

  • 2 tbsp oil (vegetable or olive oil)

  • 1/2 tsp cumin

  • Salt and pepper, to taste

  • Optional toppings: chopped cilantro, queso fresco, lime wedges


🔪 Instructions:

  1. Brown the Ground Beef:

    • In a large skillet or saucepan, cook ground beef over medium heat until browned. Drain excess fat if needed.

    • Add onions and garlic, sauté for 2–3 minutes until fragrant.

  2. Add the Potatoes:

    • Stir in the diced potatoes, cumin, salt, and pepper.

    • Cook for 5–7 minutes, stirring occasionally, to start softening the potatoes.

  3. Toast the Fideo:

    • In a separate pan, heat 2 tbsp oil. Add fideo and toast it, stirring constantly, until golden brown (about 5 minutes). Be careful not to burn it.

  4. Combine and Simmer:

    • Add toasted fideo to the beef and potatoes.

    • Pour in the tomato sauce and chicken broth. Stir well to combine.

  5. Cook:

    • Bring to a boil, then reduce heat to a simmer.

    • Cover and cook for 10–15 minutes, or until noodles and potatoes are tender and the sauce has thickened a bit.

  6. Taste and Serve:

    • Adjust seasoning with salt and pepper.

    • Serve hot, optionally topped with cilantro, crumbled queso fresco, or a squeeze of lime.

  • Serve with warm flour tortillas or crusty bread.

  • Great with a side of refried beans or a simple green salad.
