For the pork chops:

  • 4 bone-in pork chops (1/2 to 1 inch thick)

  • Salt & black pepper, to taste

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • 1/2 cup all-purpose flour (for dredging)

  • 2 tbsp oil (vegetable, canola, or olive oil)

  • 1 tbsp butter

For the gravy:

  • 1 large onion, thinly sliced

  • 2 cloves garlic, minced

  • 2 tbsp flour (from dredging)

  • 2 cups chicken broth

  • 1/2 cup heavy cream (optional, for extra richness)

  • 1 tsp Worcestershire sauce

  • 1/2 tsp thyme (fresh or dried)

  • Salt & pepper, to taste

1. Season and dredge the pork chops:

  • Pat pork chops dry. Season both sides with salt, pepper, garlic powder, onion powder, and paprika.

  • Dredge lightly in flour and shake off excess. Reserve 2 tbsp of the flour for the gravy.

2. Sear the pork chops:

  • Heat oil and butter in a large skillet over medium-high heat.

  • Sear pork chops for 3–4 minutes per side, or until golden brown. Remove and set aside.

3. Make the onion gravy:

  • In the same skillet, add sliced onions. Cook over medium heat for 5–7 minutes until soft and caramelized.

  • Add garlic and cook for 1 more minute.

  • Sprinkle in the reserved 2 tbsp flour. Stir for 1–2 minutes to make a light roux.

4. Build the gravy:

  • Slowly whisk in the chicken broth, scraping up browned bits from the pan.

  • Add Worcestershire, thyme, and cream (if using).

  • Simmer until thickened slightly, about 3–5 minutes.

5. Smother the pork chops:

  • Return chops to the skillet and spoon gravy over the top.

  • Cover, reduce heat to low, and simmer for 20–25 minutes, or until chops are tender and cooked through.

6. Serve:

  • Spoon extra gravy over the top.

  • Serve with mashed potatoes, rice, or buttered noodles β€” and don’t forget some green beans or collard greens on the side.
