Here’s a hearty and easy Slow Cooker Chicken Stew recipe — perfect for a cozy dinner with minimal effort. It’s rich, comforting, and packed with tender chicken and vegetables.


🍲 Slow Cooker Chicken Stew

📝 Ingredients:

  • 1.5–2 lbs boneless, skinless chicken thighs or breasts, cut into chunks

  • 4 cups chicken broth

  • 3–4 medium potatoes, peeled and diced

  • 3 carrots, sliced

  • 2 celery stalks, chopped

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

  • Salt & pepper, to taste

  • 1/4 cup all-purpose flour (for thickening)

  • 1/2 cup heavy cream or milk (optional, for creamier stew)

  • 2 tbsp olive oil or melted butter


🥣 Instructions:

  1. Prep ingredients: Add chicken, potatoes, carrots, celery, onion, and garlic to the slow cooker.

  2. Season with thyme, rosemary, bay leaf, salt, and pepper.

  3. Pour in chicken broth and stir to combine everything.

  4. Cover and cook:

    • On LOW for 6–7 hours

    • Or HIGH for 3.5–4 hours, until chicken and vegetables are tender.

  5. Thicken the stew:

    • In a small bowl, whisk flour with 1/2 cup of the hot broth or water until smooth.

    • Stir the slurry back into the stew and cook for another 20–30 minutes on high to thicken.

  6. Optional creaminess: Stir in heavy cream or milk at the end for a richer stew.

  7. Taste and adjust seasoning before serving.


🍽️ Serving Tips:

  • Serve with crusty bread or over rice.

  • Garnish with fresh parsley or a sprinkle of Parmesan if desired.


🔁 Variations:

  • Add frozen peas or corn in the last 30 minutes.

  • Use sweet potatoes instead of regular potatoes.

  • Add a splash of white wine for depth of flavor.
