🌶️ Red Cheese Enchiladas & Bean Burrito Combo


🧀 Red Cheese Enchiladas

Ingredients (for 2–3 servings):

  • 6 corn tortillas

  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

  • 1/2 cup finely chopped onion (optional)

  • Red enchilada sauce (homemade or canned – see below)

  • Oil for softening tortillas

Instructions:

  1. Prep Sauce & Tortillas: Warm sauce. Lightly fry tortillas to soften.

  2. Assemble: Dip tortilla in sauce, fill with cheese/onion, roll up and place in a baking dish.

  3. Top & Bake: Pour sauce over enchiladas, top with cheese, cover with foil and bake at 375°F (190°C) for 20–25 mins.

  4. Serve with: Cilantro, sour cream, or green onions.


🌯 Simple Bean & Cheese Burrito

Ingredients (makes 2 burritos):

  • 2 large flour tortillas

  • 1 cup refried beans (canned or homemade)

  • 1 cup shredded cheese

  • 1/4 cup salsa (optional)

  • Sour cream or hot sauce (optional)

Instructions:

  1. Warm Tortillas: Microwave for 10–15 seconds or heat on a skillet to make them pliable.

  2. Layer Filling: Spread refried beans down the center. Add cheese and a spoon of salsa or sour cream.

  3. Wrap: Fold in sides and roll tightly into a burrito.

  4. Optional: Toast seam-side down in a skillet for a crisp finish.
