Hungarian Meatloaf

Here’s a flavorful, comforting recipe for Hungarian Meatloaf — inspired by classic Central European flavors like paprika, garlic, and sometimes even hard-boiled eggs tucked inside. It’s hearty, savory, and perfect served with mashed potatoes or buttered noodles.


🇭🇺🍖 Hungarian Meatloaf (Magyar Fasírt)


✅ Ingredients:

  • 1½ lbs (680g) ground beef (or a mix of beef and pork)

  • 1 small onion, finely chopped

  • 2–3 cloves garlic, minced

  • 2 slices white bread, soaked in a bit of milk, then squeezed out

  • 2 large eggs

  • 1–2 tsp Hungarian sweet paprika

  • 1 tsp salt, to taste

  • ½ tsp black pepper

  • ½ tsp caraway seeds (optional)

  • 2 tsp parsley, chopped

  • Optional: 1–2 hard-boiled eggs, peeled

  • Optional: ½ tsp hot paprika or chili flakes for heat


🥣 Instructions:

  1. Preheat oven to 375°F (190°C). Grease or line a loaf pan.

  2. Mix the meatloaf base:
    In a large bowl, combine:

    • Ground meat

    • Onion, garlic

    • Squeezed-out bread

    • Eggs

    • Paprika(s), salt, pepper, caraway (if using), and parsley

    Mix gently with your hands or a spoon until just combined — don’t overmix.

  3. Add filling (optional):

    • If using, shape half the meat mixture into a loaf in your pan, then press 1–2 hard-boiled eggs lengthwise down the center.

    • Cover with the remaining meat and shape into a loaf, sealing the eggs inside.

  4. Bake:

    • Bake uncovered for 55–65 minutes, or until the internal temp reaches 160°F (70°C).

    • Let rest 10 minutes before slicing.

  5. Serve:

    • Traditionally served with mashed potatoes, pickles, or cucumber salad.


🍽️ Tips & Variations:

  • Add grated carrot or shredded cabbage to the mix for moisture and nutrition.

  • Top with a brush of tomato paste, ketchup, or sour cream before baking for a flavorful crust.

  • Want a more authentic Hungarian flavor? Use lard instead of oil for sautéing onions, or add a touch of smoked paprika.
