PEPPER STEAK IN A CROCK POT

Here’s a simple and tasty Pepper Steak recipe made easy in the crockpot! Tender beef strips with colorful peppers and a savory sauce, slow-cooked to perfection.


🥩🌶️ Crockpot Pepper Steak


Ingredients:

  • 2 lbs sirloin steak or flank steak, thinly sliced into strips

  • 3 bell peppers (mix of red, green, yellow), sliced into strips

  • 1 medium onion, sliced

  • 3 cloves garlic, minced

  • ½ cup soy sauce

  • ¼ cup beef broth

  • 2 tbsp brown sugar

  • 1 tbsp cornstarch

  • 1 tbsp water

  • 1 tsp ground black pepper (or to taste)

  • 1 tbsp vegetable oil

  • Optional: 1 tsp ginger, minced or powdered


Instructions:

  1. Prepare the steak:
    Toss the sliced steak with black pepper and garlic.

  2. Brown the steak (optional but recommended):
    Heat vegetable oil in a skillet over medium-high heat. Quickly sear steak strips just until browned (about 1-2 minutes). This step adds flavor but you can skip it if you’re short on time.

  3. Add ingredients to crockpot:
    Place seared steak, sliced bell peppers, and onion into the crockpot.

  4. Mix sauce:
    In a bowl, whisk together soy sauce, beef broth, brown sugar, and ginger (if using). Pour over the steak and veggies.

  5. Cook:
    Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until steak is tender and peppers are cooked but still slightly crisp.

  6. Thicken sauce:
    About 30 minutes before serving, mix cornstarch and water to make a slurry. Stir it into the crockpot to thicken the sauce. Cook uncovered for the remaining time.

  7. Serve:
    Serve hot over steamed rice or noodles.


Tips:

  • Use fresh, colorful bell peppers for a vibrant dish.

  • Add sliced mushrooms or snap peas for extra veggies.

  • Adjust black pepper to get your preferred heat level.
