Here’s a delicious homemade Carne Asada con Chile Verde recipe — a fusion of tender grilled beef and a bold, spicy green chile sauce. This dish combines the smoky richness of carne asada with the tangy heat of a chile verde salsa, perfect for tacos, burritos, or plated with rice and beans.


🌮 Homemade Carne Asada con Chile Verde Recipe

🔥 Ingredients

For the Carne Asada:

  • 2 lbs flank or skirt steak

  • 4 cloves garlic (minced)

  • 1/4 cup fresh lime juice (about 2 limes)

  • 1/4 cup orange juice

  • 1/4 cup olive oil

  • 1/4 cup chopped cilantro

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1 tsp salt

  • 1/2 tsp black pepper

For the Chile Verde Sauce:

  • 1.5 lbs tomatillos, husked and rinsed

  • 3–4 jalapeños or serranos (stemmed; adjust for heat preference)

  • 1 poblano pepper (optional for smokier flavor)

  • 1 small white onion (quartered)

  • 3 cloves garlic

  • 1/2 cup fresh cilantro

  • 1 tsp salt (to taste)

  • 1 tbsp vegetable oil

  • Juice of 1 lime


🔪 Instructions

1. Marinate the Carne Asada

  1. In a large bowl or zip-top bag, mix all carne asada marinade ingredients.

  2. Add steak, coat well, and marinate for at least 2 hours, ideally overnight in the fridge.

2. Make the Chile Verde

  1. Boil or roast tomatillos, jalapeños, poblano, onion, and garlic until soft and charred (~10–12 min if roasting).

  2. Blend with cilantro, lime juice, and salt until smooth.

  3. Heat oil in a saucepan over medium heat. Pour in blended salsa and simmer for 10–15 minutes until thickened and the flavor deepens.

3. Grill the Carne Asada

  1. Preheat grill or skillet to high heat.

  2. Cook steak 4–6 minutes per side, depending on thickness and preferred doneness.

  3. Let rest 5 minutes, then slice thinly against the grain.

4. Combine and Serve

  • Option 1: Toss the sliced carne asada directly in the chile verde sauce for full flavor absorption.

  • Option 2: Plate steak, then spoon chile verde over the top.

  • Tacos: With onions, cilantro, and lime

  • Burritos or Bowls: With rice, beans, cheese, and guacamole

  • Plated Meal: With Mexican rice, refried beans, and warm tortillas


🌶️ Tips

  • For extra depth, grill the tomatillos and chiles instead of boiling.

  • If you like milder heat, remove the seeds from the chiles before blending.

  • Swap the steak for grilled chicken or pork if desired.
