🌮 Mexican Casserole (Taco Bake Style)
📝 Ingredients:

1 lb ground beef (or ground turkey)

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) Rotel (diced tomatoes with green chilies), undrained

1 cup salsa (your preferred heat level)

2 cups shredded cheddar cheese (or Mexican blend)

6 small flour or corn tortillas, cut into quarters or strips

Optional toppings: sour cream, avocado, green onions, jalapeños, cilantro

Preheat oven to 375°F (190°C).

Cook the meat: In a large skillet, brown ground beef over medium heat. Drain excess fat.

Add flavor: Stir in taco seasoning, a splash of water (about 1/4 cup), and cook until thickened (2–3 minutes).

Mix the filling: Add black beans, corn, Rotel, and salsa. Stir to combine and heat through.
