🥒 Crispy Air Fryer Parmesan Zucchini Fries

Ingredients:

  • 2 medium zucchinis

  • ½ cup all-purpose flour

  • 2 large eggs

  • 1 cup panko breadcrumbs

  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning (optional)

  • Salt & pepper to taste

  • Cooking spray or olive oil spray


🧑‍🍳 Instructions:

1. Prep the zucchini:

  • Cut zucchinis into “fries” — about 3-inch sticks, roughly ½ inch thick.

2. Set up dredging stations:

  • Place flour in one shallow bowl.

  • Beat eggs in a second bowl.

  • In a third bowl, combine panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.

3. Coat the zucchini fries:

  • Dip zucchini sticks first in flour, shaking off excess.

  • Then dip in beaten egg.

  • Finally, coat evenly in the panko-Parmesan mixture, pressing gently to adhere.

4. Air fry:

  • Preheat air fryer to 400°F (200°C) for 3 minutes.

  • Spray the basket with cooking spray.

  • Place zucchini fries in a single layer (don’t overcrowd; do batches if needed).

  • Spray the fries lightly with cooking spray.

  • Air fry for 8–10 minutes, flipping halfway, until golden and crispy.

5. Serve:

  • Serve immediately with your favorite dipping sauce — ranch, marinara, or a zesty aioli!


💡 Tips:

  • For extra crisp, add 1–2 tbsp cornstarch to the flour station.

  • Don’t skip spraying with oil — it’s key for crunch!
