🥒 Crispy Air Fryer Parmesan Zucchini Fries
Ingredients:
-
2 medium zucchinis
-
½ cup all-purpose flour
-
2 large eggs
-
1 cup panko breadcrumbs
-
½ cup grated Parmesan cheese
-
1 tsp garlic powder
-
1 tsp Italian seasoning (optional)
-
Salt & pepper to taste
-
Cooking spray or olive oil spray
🧑🍳 Instructions:
1. Prep the zucchini:
-
Cut zucchinis into “fries” — about 3-inch sticks, roughly ½ inch thick.
2. Set up dredging stations:
-
Place flour in one shallow bowl.
-
Beat eggs in a second bowl.
-
In a third bowl, combine panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
3. Coat the zucchini fries:
-
Dip zucchini sticks first in flour, shaking off excess.
-
Then dip in beaten egg.
-
Finally, coat evenly in the panko-Parmesan mixture, pressing gently to adhere.
4. Air fry:
-
Preheat air fryer to 400°F (200°C) for 3 minutes.
-
Spray the basket with cooking spray.
-
Place zucchini fries in a single layer (don’t overcrowd; do batches if needed).
-
Spray the fries lightly with cooking spray.
-
Air fry for 8–10 minutes, flipping halfway, until golden and crispy.
5. Serve:
-
Serve immediately with your favorite dipping sauce — ranch, marinara, or a zesty aioli!
💡 Tips:
-
For extra crisp, add 1–2 tbsp cornstarch to the flour station.
-
Don’t skip spraying with oil — it’s key for crunch!
-
If you want, add a pinch of crushed red pepper flakes for a little heat.
