  • 4 ears of corn, husked

  • 1/2 cup mayonnaise

  • 1/2 cup sour cream or Mexican crema

  • 1/2 cup crumbled cotija cheese (or feta)

  • 1 tsp chili powder (adjust to taste)

  • 1/2 tsp smoked paprika (optional)

  • Juice of 1 lime

  • Fresh cilantro, chopped (optional)

  • Salt, to taste

  • Lime wedges, for serving

1. Grill the Corn:

  • Preheat grill or grill pan to medium-high heat.

  • Grill corn for 8–10 minutes, turning occasionally, until charred and cooked through.

3. Slather & Coat:
