📝 Ingredients:

600 g full cream milk

300 g thickened cream (or heavy cream)

150 g caster sugar

1 tablespoon vanilla extract
(or 1 vanilla bean, split and scraped) -
6 egg yolks

Pinch of salt
🥄 Instructions:
1. Make the Custard Base:

Add milk, cream, sugar, vanilla, egg yolks, and salt to the Thermomix bowl.

Cook for 8 minutes / 90°C / speed 4.
✅ Tip: If using a vanilla bean, add both seeds and pod before cooking and remove the pod after.
2. Cool the Mixture:

Once cooked, pour the custard into a bowl and let it cool slightly.

Then chill in the fridge for at least 4 hours, or until very cold.
3. Churn or Freeze:

If you have an ice cream maker:
Pour the chilled mixture into the machine and churn according to its instructions. Freeze for 2–4 hours to firm up. -
If no ice cream maker:
Pour the custard into ice cube trays and freeze until solid. Once frozen:-
Place the cubes into the Thermomix bowl.

Blend 30 sec / speed 6, then 20 sec / speed 4 with the spatula until smooth and creamy.
