Fried Rice

You got it — Fried Rice is one of those endlessly customizable comfort dishes that’s fast, satisfying, and great for using up leftovers. Whether you want it classic, veggie-packed, or protein-loaded, this version gives you that golden, slightly crispy, takeout-style flavor right from your kitchen.


🍚 Classic Fried Rice

Better-than-takeout style, ready in under 30 minutes
Serves 4


🧾 Ingredients

  • 3 cups cooked and cooled rice (day-old is best; jasmine or long-grain preferred)

  • 2–3 tbsp oil (vegetable, peanut, or sesame oil)

  • 2 eggs, lightly beaten

  • 1 cup frozen peas and carrots (thawed)

  • 3 green onions, sliced (separate white and green parts)

  • 2–3 cloves garlic, minced

  • 2–3 tbsp soy sauce (or tamari for gluten-free)

  • 1 tbsp oyster sauce (optional but adds depth)

  • 1 tsp sesame oil (for finishing)

  • Salt & pepper to taste

Optional Add-ins:

  • Diced cooked chicken, shrimp, pork, or tofu

  • Bell peppers, cabbage, mushrooms

  • Chili garlic sauce for heat


🔥 Instructions

1. Prep First

  • Make sure rice is cold (leftover rice works best to avoid mushy texture).

  • Thaw veggies, crack eggs, chop garlic/onions, and get everything ready before you start cooking — fried rice comes together fast.

2. Scramble the Eggs

  • Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

  • Add beaten eggs and scramble until just set. Remove and set aside.

3. Stir-Fry Veggies & Aromatics

  • Add another 1 tbsp oil. Sauté garlic and white parts of green onions for 30 seconds.

  • Toss in peas and carrots (or other veggies) and stir-fry for 2–3 minutes.

4. Add Rice & Sear It

  • Increase heat to high. Add the cold rice, breaking up clumps.

  • Let it sit undisturbed for 1–2 minutes to get some crisp on the bottom.

  • Stir-fry for 3–5 minutes, mixing and flipping until heated through and lightly golden.

5. Season It

  • Add soy sauce, oyster sauce (if using), and sesame oil. Mix well.

  • Stir in the scrambled eggs and green onion tops.

  • Taste and adjust seasoning with salt, pepper, or more soy sauce.


🧠 Tips for Perfect Fried Rice:

  • Don’t overcrowd the pan — use a big skillet or wok for best results.

  • Want it spicy? Add sriracha or chili oil.

  • Need it faster? Use a bag of frozen mixed stir-fry veggies.
