Heavenly Banana Walnut Cream Cake

Here’s a truly indulgent and moist Heavenly Banana Walnut Cream Cake — a layered dessert that combines fluffy banana cake, crunchy walnuts, and a luscious whipped cream or cream cheese frosting. Perfect for celebrations or whenever you crave something rich yet comforting!


🍌 Heavenly Banana Walnut Cream Cake

🧾 Ingredients:

For the cake:
  • 2 cups all-purpose flour

  • 1 ½ teaspoons baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon (optional, but recommended)

  • ½ cup unsalted butter, softened

  • ½ cup vegetable oil (or another ½ cup butter)

  • 1 cup granulated sugar

  • ½ cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • ½ cup sour cream or plain Greek yogurt

  • 3 ripe bananas, mashed (about 1 to 1¼ cups)

  • 1 cup chopped walnuts, toasted

For the cream frosting (choose one):

Option 1: Whipped Cream Frosting

  • 2 cups heavy cream

  • ⅓ cup powdered sugar

  • 1 teaspoon vanilla extract

Option 2: Cream Cheese Frosting

  • 8 oz cream cheese, softened

  • ½ cup butter, softened

  • 1 teaspoon vanilla

  • 2–2½ cups powdered sugar


👩‍🍳 Instructions:

1. Prepare the cake batter:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch or 9-inch round cake pans (or one 9×13-inch pan).

  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon.

  3. In a large bowl, cream butter, oil, sugar, and brown sugar until light and fluffy.

  4. Add eggs one at a time, then mix in vanilla, sour cream, and mashed bananas.

  5. Gradually stir in the dry ingredients until just combined. Fold in the chopped walnuts.

2. Bake:

  • Divide batter evenly between pans.

  • Bake for 28–33 minutes or until a toothpick comes out clean.

  • Let cakes cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

3. Make the frosting:

For Whipped Cream Frosting:

  • Beat cold heavy cream, powdered sugar, and vanilla on high speed until stiff peaks form.

For Cream Cheese Frosting:

  • Beat cream cheese and butter until smooth. Add vanilla and beat in powdered sugar until fluffy.

4. Assemble the cake:

  • Spread a layer of frosting on the first cake layer.

  • Add second layer and cover the top and sides.

  • Optional: Decorate with toasted walnuts, banana slices, or a drizzle of caramel sauce.


🌟 Tips:

  • Banana slices on top should be added just before serving to avoid browning.

  • Cake can be made 1 day in advance and refrigerated (covered).

  • Store leftovers in the fridge for up to 3 days.
