Here’s a delicious and satisfying Green Chile and Extra Cheese Chilaquiles recipe – a comfort food classic with a New Mexico twist!


🌶️ Green Chile and Extra Cheese Chilaquiles

Cook Time: 15–20 minutes


🧀 Ingredients:

For the sauce:

  • 1 tbsp olive oil

  • 1/2 white onion, chopped

  • 2 cloves garlic, minced

  • 1–2 cups roasted green chile (Hatch preferred), peeled and chopped

  • 1/2 cup tomatillo salsa or salsa verde

  • 1/2 cup chicken or vegetable broth

  • Salt to taste

For the chilaquiles:

  • 6–8 corn tortillas, cut into triangles (or use thick tortilla chips)

  • Neutral oil for frying (if using fresh tortillas)

  • 1 ½ cups shredded cheese (mix of Monterey Jack, cheddar, and/or Oaxaca)

  • Optional: 1/4 cup crumbled queso fresco or cotija for garnish

Toppings (all optional but recommended):

  • Fried or scrambled eggs

  • Sliced avocado or guacamole

  • Chopped fresh cilantro

  • Sliced radishes

  • Pickled red onions

  • Sour cream or crema

  • Lime wedges


🔥 Instructions:

1. Make the sauce:

  • In a medium skillet over medium heat, add olive oil and sauté the onion until soft (about 3–4 minutes).

  • Add garlic and cook for another 30 seconds.

  • Stir in the chopped green chile and salsa verde. Cook for 2 minutes.

  • Add broth and simmer for 5 minutes until slightly thickened. Blend if smoother texture is desired.

  • Taste and season with salt.

2. Prepare the tortillas:

  • If using fresh tortillas: Heat oil in a pan and fry the tortilla triangles in batches until crispy and golden. Drain on paper towels.

  • If using chips: Skip to the next step.

3. Combine:

  • In a large skillet, heat the green chile sauce to a simmer.

  • Add the tortilla chips and stir to coat evenly.

  • Sprinkle shredded cheese over the top. Cover and let it melt (2–3 minutes). For extra cheesiness, broil briefly until bubbling and golden.

4. Serve:

  • Plate and top with fried eggs, avocado, cilantro, queso fresco, etc.

  • Add a squeeze of lime and enjoy!


💡 Tips:

  • For spicier chilaquiles, add jalapeños or hot Hatch chile.

  • You can also bake everything in a casserole dish for a more layered effect.

  • Make it a full meal by adding shredded chicken or beans.
