🍅 Homemade Tomato Soup
Ingredients (Serves 4):

2 tbsp olive oil or butter

1 medium onion, chopped

2–3 cloves garlic, minced

1 tbsp tomato paste

1 can (28 oz / 800g) whole peeled tomatoes (or use fresh ripe tomatoes, see tips)

2 cups (500 ml) vegetable broth (or chicken broth)

1 tsp sugar (optional, balances acidity)

Salt & freshly ground black pepper, to taste

1/4 cup heavy cream or milk (optional, for creaminess)

Instructions:

Sauté the aromatics:
In a large pot, heat olive oil over medium heat. Add chopped onion and cook until soft (about 5 minutes). Add garlic and cook for 1 more minute. -
Add tomato paste:
Stir in the tomato paste and cook for 1–2 minutes to deepen the flavor. -
Add tomatoes and broth:
Pour in the canned tomatoes (with juice), breaking them up with a spoon. Add broth and sugar. Season with salt and pepper. -
Simmer:
Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally. -
