Taco Bell Enchirito

Here’s a copycat Taco Bell Enchirito recipe — a fan-favorite classic that combines the flavors of an enchilada and a burrito in one cheesy, saucy dish. Taco Bell discontinued it (again), but you can easily recreate it at home.


🌯 Taco Bell-Style Enchirito (Copycat Recipe)

🧄 Ingredients:

For the Beef Filling:

  • 1 lb ground beef

  • ½ cup onion, finely diced

  • 2 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp cumin

  • Salt, to taste

For Assembly:

  • 6–8 small flour tortillas (6-inch)

  • 1 can (15 oz) refried beans

  • 1 cup shredded cheddar cheese (or a mix of cheddar & Monterey Jack)

  • 1 small can black olives, sliced (optional)

For Red Enchilada Sauce (or use canned for shortcut):

  • 2 tbsp vegetable oil

  • 2 tbsp all-purpose flour

  • 2 tbsp chili powder

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp cumin

  • 2 cups chicken or vegetable broth

  • Salt, to taste


🔥 Instructions:

1. Make the Red Sauce (if homemade):

  • In a saucepan, heat oil over medium heat.

  • Stir in flour and chili powder to make a roux. Cook for 1 minute.

  • Add garlic powder, onion powder, cumin, and slowly whisk in the broth.

  • Simmer for 10 minutes, stirring often, until slightly thickened. Set aside.

2. Prepare the Beef:

  • In a skillet over medium heat, cook ground beef and onions until browned.

  • Drain excess fat, then stir in the seasonings: chili powder, garlic powder, onion powder, cumin, and salt.

  • Simmer for a couple of minutes. Set aside.

3. Warm the Beans & Tortillas:

  • Heat refried beans in a saucepan or microwave.

  • Warm tortillas slightly to make them more flexible (wrap in a damp towel and microwave for 30 seconds).

4. Assemble the Enchiritos:

  • On each tortilla, spread a layer of refried beans.

  • Add a scoop of seasoned beef.

  • Roll into a burrito (ends open like Taco Bell style).

  • Place seam side down in a baking dish.

5. Top & Bake:

  • Spoon warm red sauce generously over each Enchirito.

  • Sprinkle with shredded cheese and optional olives.

  • Bake at 375°F (190°C) for 10–12 minutes, or until cheese is melted and bubbly.


✅ Serve with:

  • Mexican rice or tortilla chips

  • A dollop of sour cream or Taco Bell’s creamy jalapeño sauce

  • Extra hot sauce (Taco Bell Fire or Diablo, if you have it)
