For Assembly:

6–8 small flour tortillas (6-inch)

1 cup shredded cheddar cheese (or a mix of cheddar & Monterey Jack)

For Red Enchilada Sauce (or use canned for shortcut):

2 tbsp vegetable oil

2 tbsp all-purpose flour

2 tbsp chili powder

½ tsp garlic powder

½ tsp onion powder

¼ tsp cumin

2 cups chicken or vegetable broth

1. Make the Red Sauce (if homemade):
