Green Chili Burros

Here’s a hearty and flavorful Green Chili Burros recipe—tender meat simmered in a green chile sauce, wrapped in a warm flour tortilla. This is classic Southwestern comfort food, perfect for lunch, dinner, or meal prep.


🌯 Green Chili Burros (Arizona-style)

📝 Ingredients:

For the meat filling:

  • 2 lbs beef chuck roast or pork shoulder (or use ground beef for a faster version)

  • 1 tbsp oil

  • 1 small onion, diced

  • 3–4 cloves garlic, minced

  • 1 (4 oz) can diced green chiles

  • 1 (10 oz) can green enchilada sauce or tomatillo salsa

  • 1 cup beef broth (or chicken broth)

  • 1 tsp cumin

  • ½ tsp oregano

  • Salt & pepper to taste

For assembling:

  • 6–8 large flour tortillas

  • Shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • Sour cream (optional)

  • Fresh cilantro or green onions (optional)


👩‍🍳 Instructions:

Slow-Cooked Meat Version (best flavor)

  1. Sear the meat (if using roast or shoulder):
    In a large pot or Dutch oven, heat oil over medium-high heat. Season meat with salt & pepper, sear on all sides until browned. Remove and set aside.

  2. Sauté aromatics:
    In the same pot, sauté onion and garlic until softened (2–3 minutes).

  3. Add everything to the pot:
    Return meat to the pot. Add green chiles, enchilada sauce, broth, cumin, oregano, and a little more salt & pepper. Bring to a boil, then reduce heat, cover, and simmer for 2.5 to 3 hours until meat is fall-apart tender. (Or use a slow cooker for 6–8 hours on low.)

  4. Shred the meat:
    Remove the meat, shred with two forks, and return to the sauce to soak up flavor. Simmer uncovered a bit to thicken if needed.

Fast Weeknight Version (ground beef)

  1. Brown 1.5 lbs ground beef with onion and garlic.

  2. Add green chiles, enchilada sauce, broth, and spices.

  3. Simmer uncovered 15–20 minutes until thickened.


🌯 To Assemble the Burros:

  1. Warm tortillas until pliable.

  2. Spoon generous meat mixture into each tortilla.

  3. Top with cheese and optional sour cream.

  4. Roll up burrito-style.

  5. (Optional: place seam-side down in a hot skillet or under a broiler to crisp the tortilla slightly.)


🔁 Variations:

  • “Wet” burros: Place assembled burros in a baking dish, pour extra green chile sauce over top, sprinkle with cheese, and broil until bubbly.

  • Add rice or beans inside for a fuller meal.

  • Make it spicy: Use Hatch green chiles or add jalapeños or hot sauce.
