  • 4–6 bone-in chicken pieces (thighs, drumsticks, or breasts)

  • 2 cups all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper to taste

  • Vegetable oil for frying

1. Marinate the chicken:

  • In a bowl or zip-top bag, soak chicken in buttermilk + a little salt for at least 2 hours, or overnight for best flavor.

2. Prepare the coating:

  • In a shallow dish, mix flour with paprika, garlic powder, onion powder, salt, and pepper.

3. Coat and fry:

  • Remove chicken from buttermilk (let excess drip off).

  • Dredge in seasoned flour, pressing to coat well.

  • Heat oil (about 1–1.5 inches deep) in a heavy skillet to 350Β°F (175Β°C).

  • Fry chicken in batches, 8–12 minutes per side, until golden brown and cooked through (internal temp 165Β°F / 74Β°C).

4. Drain and rest:

  • Set chicken on a wire rack or paper towels. Let rest 5 minutes.

  • 2 lbs (about 4 large) russet or Yukon gold potatoes

  • 1/2 cup whole milk (warm)

  • 1/4 cup butter (room temp)

1. Boil the potatoes:

  • Peel and cut into chunks.

  • Place in salted water, boil until fork-tender (about 15–20 minutes).

2. Mash & mix:

  • Drain and return to pot.

  • Mash with butter, then slowly stir in warm milk.

  • Season to taste. Add sour cream or garlic for extra flavor if desired.
