🥄 Super Easy Kielbasa Bean Soup

📝 Ingredients (Serves 4–6)

  • 1 tbsp olive oil

  • 12 oz (340g) kielbasa, sliced into half-moons

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 (15 oz) cans white beans (like cannellini or great northern), drained & rinsed

  • 1 (14.5 oz) can diced tomatoes (with juices)

  • 4 cups chicken broth

  • 1 tsp smoked paprika (optional, but adds depth)

  • 1/2 tsp dried thyme or Italian seasoning

  • Salt & black pepper to taste

  • 1–2 cups chopped fresh spinach or kale (optional, for color/nutrition)


🔥 Instructions

1. Sauté the sausage:

In a large pot or Dutch oven, heat oil over medium heat.
Add sliced kielbasa and cook for 4–5 minutes, until browned.

2. Add aromatics:

Stir in diced onion and garlic. Cook for another 2–3 minutes until soft and fragrant.

3. Build the soup:

Add beans, diced tomatoes, broth, smoked paprika, and thyme.
Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.

4. Add greens (optional):

Stir in spinach or kale during the last 5 minutes of cooking, just until wilted.

5. Taste & serve:

Season with salt and pepper as needed.
Ladle into bowls and serve with crusty bread or cornbread.
