🥢 Easy, Crispy Golden Brown Egg Rolls

🔪 Ingredients (Makes ~10 egg rolls)

For the filling:

  • 2 cups shredded cabbage (or coleslaw mix)

  • 1 cup shredded carrots

  • 1/2 small onion, finely sliced

  • 2 cloves garlic, minced

  • 1 tsp grated fresh ginger (or 1/4 tsp ground)

  • 1/2 lb ground pork, chicken, or tofu (optional)

  • 2 tbsp soy sauce

  • 1 tsp sesame oil

  • 1/2 tsp black pepper

  • 1 tbsp vegetable oil (for sautéing)

For the wrapping & frying:

  • 10 egg roll wrappers (store-bought)

  • 1 egg (beaten, for sealing)

  • Vegetable oil (for frying)


🔥 Instructions

1. Make the filling:

  • In a skillet, heat 1 tbsp vegetable oil over medium-high.

  • Add ground meat (if using) and cook until browned.

  • Add cabbage, carrots, onion, garlic, and ginger. Stir-fry for 3–4 minutes until softened.

  • Season with soy sauce, sesame oil, and pepper. Let cool slightly.

2. Wrap the egg rolls:

  • Lay an egg roll wrapper in a diamond shape.

  • Place ~2 tbsp of filling near the center.

  • Fold the bottom point up over the filling, then fold in the sides.

  • Roll tightly toward the top, brushing the final corner with beaten egg to seal.

  • Repeat for all wrappers.

3. Fry until golden:

  • Heat 1.5–2 inches of oil in a deep skillet or pot to 350°F (175°C).

  • Fry egg rolls in batches, 2–3 minutes per side, until golden brown and crispy.

  • Drain on paper towels.


🥣 Serve with:

  • Sweet chili sauce

  • Soy sauce with rice vinegar

  • Spicy mustard or hoisin


🔄 Tips & Variations:

  • Air Fryer Option: Spray with oil, cook at 380°F for 10–12 minutes, flipping halfway.

  • Bake instead: Brush with oil, bake at 400°F for 20–25 minutes.
