Rotel Tacos Recipe

Here’s a quick and zesty twist on taco night:

๐ŸŒฎ Rotel Tacos

These tacos are loaded with seasoned ground beef, Rotel tomatoes (with green chilies), and melty cheese โ€” all wrapped in a crunchy or soft taco shell. Itโ€™s flavorful, budget-friendly, and super fast to make.


๐Ÿ•’ Total Time: 25โ€“30 minutes

๐Ÿฝ Servings: 4โ€“6 (makes about 10โ€“12 tacos)


๐ŸŒถ๏ธ Ingredients:

  • 1 lb ground beef

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies, undrained)

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1/2 cup shredded cheddar or Mexican blend cheese

  • Taco shells (hard or soft)

  • Optional toppings: sour cream, lettuce, diced onion, jalapeรฑos, avocado, salsa


๐Ÿ”ช Instructions:

1. Brown the Beef:

  • In a skillet over medium-high heat, cook ground beef until fully browned.

  • Drain excess fat.

2. Add Rotel + Seasoning:

  • Stir in the full can of Rotel (donโ€™t drain).

  • Add taco seasoning and 1/4 cup water.

  • Simmer for about 5โ€“7 minutes, until thickened.

3. Add Cheese:

  • Stir in shredded cheese until melted and combined. Turn off heat.

4. Assemble the Tacos:

  • Fill taco shells with the beef-Rotel mixture.

  • Top with your favorite fixings.


๐Ÿ”„ Variations:

  • Use ground turkey or chicken for a lighter version.

  • Add black beans or corn for extra bulk.

  • Make it creamy: stir in 2โ€“3 tbsp cream cheese with the beef and Rotel!


๐ŸงŠ Storage:

  • Store leftover taco filling in the fridge for up to 3 days โ€” great for taco bowls, nachos, or quesadillas.
