🧈 Ingredients:

  • 3 cups Rice Krispies cereal

  • 1 cup creamy peanut butter (or almond/sunflower butter for nut-free)

  • 1/2 cup unsalted butter, melted

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 1/2 cups semisweet or milk chocolate chips

  • 1 tbsp coconut oil or shortening (optional, for smoother coating)

1. Make the Base

In a large bowl, mix together:

  • Melted butter

  • Peanut butter

  • Powdered sugar

  • Vanilla extract
    Mix until smooth. Stir in Rice Krispies cereal until evenly coated.

  • Scoop and roll mixture into 1-inch balls.

  • Place on a baking sheet lined with parchment paper.

  • Chill in the fridge or freezer for 20–30 minutes until firm.


3. Melt the Chocolate

  • In a microwave-safe bowl, melt chocolate chips (and coconut oil, if using) in 30-second intervals, stirring between each until smooth.


4. Dip the Balls

  • Using a fork or toothpick, dip each chilled ball into the melted chocolate.

  • Let excess drip off, then place back on parchment paper.


5. Set and Serve

  • Chill in the fridge until chocolate is set (about 15 minutes).

  • Store in an airtight container in the fridge for up to 1 week β€” or freeze for longer!
