  • 10–12 oz bowtie (farfalle) pasta

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 2 tbsp all-purpose flour

  • 2 cups milk (whole or 2%)

  • 1 cup heavy cream

  • 1 cup freshly grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1/2 tsp crushed red pepper flakes (optional)

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)

1. Cook the Pasta

  • Boil bowtie pasta in salted water until al dente.

  • Reserve 1/2 cup pasta water, then drain and set pasta aside.

2. Sear the Beef

  • While pasta cooks, heat 1 tbsp oil or butter in a large skillet over medium-high heat.

  • Season beef with salt and pepper.

  • Sear slices for 2–3 minutes per side until browned and just cooked. Remove and set aside.

3. Make the Garlic Parmesan Sauce

  • In the same pan, reduce heat to medium.

  • Add 3 tbsp butter and the minced garlic. SautΓ© until fragrant (about 1 minute).

  • Whisk in the flour and cook for 1–2 minutes to form a roux.

  • Slowly whisk in milk and cream, stirring constantly until smooth.

  • Add Parmesan cheese, Italian seasoning, and red pepper flakes.

  • Simmer 3–5 minutes, stirring until thickened. Season with salt and pepper to taste.

4. Combine Everything

  • Add cooked pasta and beef back into the sauce.

  • If the sauce is too thick, thin it with some reserved pasta water.

  • Stir gently to coat everything evenly and heat through (2–3 minutes).

5. Serve

  • Garnish with chopped parsley and extra Parmesan if desired.

  • Serve hot with crusty bread or a green salad.
