Comforting · Easy · Crowd-Pleaser

Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 cups potatoes, peeled and thinly sliced (Yukon gold or russet work great)

  • 1 (10.5 oz) can cream of mushroom soup (or cream of celery or cream of chicken)

  • 1 cup sour cream

  • 1 ½ cups shredded cheddar cheese, divided

  • ½ cup milk

  • Salt & pepper, to taste

  • 1 tsp Worcestershire sauce (optional)

  • 1 tsp paprika (optional)

  • Fresh parsley or chives, for garnish

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish.

2. Cook the Beef:

  • In a skillet over medium heat, cook ground beef with diced onion and garlic until beef is browned and onions are soft. Drain excess fat.

  • Season with salt, pepper, Worcestershire sauce, and paprika if using.

3. Mix the Sauce:

  • In a bowl, combine cream of mushroom soup, sour cream, milk, and 1 cup of the shredded cheddar. Mix well.

4. Assemble the Casserole:

  • Layer half of the sliced potatoes in the bottom of the casserole dish.

  • Spread half the beef mixture over the potatoes.

  • Spread half the soup mixture over the beef layer.

  • Repeat layers with remaining potatoes, beef, and soup mixture.

  • Top with the remaining ½ cup cheddar cheese.

5. Bake:

  • Cover with foil and bake for 45 minutes.

  • Remove foil and bake for an additional 15–20 minutes, until potatoes are tender and cheese is bubbly and golden.

6. Serve:

  • Let the casserole rest for 5 minutes. Garnish with chopped parsley or chives before serving.

🍽️ Tips & Variations:

  • Add diced bell peppers or mushrooms to the beef mixture for extra veggies.

  • Use smoked cheddar for a richer flavor.

  • Swap sour cream for Greek yogurt for a tangier sauce.

  • Use sweet potatoes or Yukon gold for a different twist.
