Ingredients:
For the Chicken:
-
2 large boneless skinless chicken breasts (or 4 thin-cut)
-
Salt & pepper, to taste
-
1 tsp garlic powder
-
1 tsp Italian seasoning
-
2 tbsp olive oil
-
2 tbsp butter
-
3–4 cloves garlic, minced
For the Alfredo Sauce:
-
3 tbsp butter
-
3–4 cloves garlic, minced
-
1 ½ cups heavy cream
-
1 cup freshly grated Parmesan cheese
-
Salt & pepper, to taste
-
Optional: pinch of nutmeg (classic in Alfredo)
For the Pasta:
-
12 oz linguine (or fettuccine), cooked and drained
-
1/4 cup reserved pasta water (optional, for loosening sauce)
-
Fresh parsley and extra Parmesan, for garnish
Instructions:
1. Cook the Chicken:
-
Season chicken with salt, pepper, garlic powder, and Italian seasoning.
-
Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.
-
Add chicken and sear 5–6 minutes per side, until golden and cooked through (165°F internal temp).
-
In the last minute of cooking, add minced garlic and spoon garlic butter over the chicken.
-
Remove and rest; slice into strips.
2. Make the Alfredo Sauce:
-
In the same skillet (don’t wipe it!), lower heat to medium.
-
Add 3 tbsp butter and sauté garlic for 30 seconds until fragrant.
-
Pour in heavy cream, bring to a gentle simmer (don’t boil), then whisk in Parmesan.
-
Stir until smooth and creamy. Season with salt, pepper, and nutmeg if using.
3. Combine with Pasta:
-
Add cooked linguine to the Alfredo sauce, tossing to coat. If sauce is too thick, stir in a splash of pasta water.
-
Add sliced chicken on top or stir it in.
4. Serve:
-
Plate the pasta and top with extra Parmesan and chopped parsley.
-
Serve with garlic bread or a crisp green salad.
🧄 Optional Additions:
-
Spinach or mushrooms: Sauté and mix into the sauce.
-
Crushed red pepper flakes: For a little heat.
-
Lemon zest or a squeeze of lemon juice: Adds brightness and balances richness.
