Here’s a fun and tasty way to use leftover mashed potatoes β€” Mashed Potato Puffs! They’re crispy on the outside, creamy inside, and perfect as a side dish, snack, or appetizer.

Servings: 12 puffs (1 standard muffin tin)
Prep Time: 10 minutes
Cook Time: 25–30 minutes

  • 2 cups mashed potatoes (leftover or fresh β€” not too runny)

  • 2 large eggs

  • Β½ cup shredded cheese (cheddar, parmesan, mozzarella β€” your choice)

  • ΒΌ cup sour cream or plain Greek yogurt

  • 2 green onions, chopped (optional)

  • Salt & pepper, to taste

  • Butter or nonstick spray, for greasing muffin tin

  1. Preheat oven to 400Β°F (200Β°C). Grease a 12-cup muffin tin with butter or spray.

  2. Mix the filling:
    In a large bowl, combine mashed potatoes, eggs, cheese, sour cream, green onions, salt, and pepper. Stir until well blended.

  3. Scoop into muffin tin:
    Fill each cup nearly to the top. You can mound them a little for extra puffiness.

  4. Bake for 25–30 minutes, until golden brown and slightly crisp on the edges.

  5. Cool & serve:
    Let cool for 5 minutes before removing from the tin. Serve warm with sour cream, hot sauce, or ketchup.
