Chocolate Chip Pan Chewies
Ingredients:
-
1/2 cup (1 stick) unsalted butter, melted
-
1 cup packed light brown sugar
-
1 large egg
-
1 tsp vanilla extract
-
1 cup all-purpose flour
-
1/4 tsp salt
-
1/2 tsp baking powder (optional for a slightly cakier chew)
-
3/4 to 1 cup semisweet chocolate chips
-
Optional: 1/2 cup chopped nuts (pecans or walnuts)
Instructions:
-
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
-
Mix wet ingredients: In a medium bowl, stir together the melted butter and brown sugar until smooth. Add the egg and vanilla, and mix until combined.
-
Add dry ingredients: Stir in the flour, salt, and baking powder (if using) just until combined—don’t overmix.
-
Fold in chocolate chips and nuts, if using.
-
Spread batter evenly into the prepared pan. It will be thick, so use a spatula to smooth it out.
-
Bake for 20–25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
-
Cool in pan for at least 15 minutes before slicing into squares.
Tips:
-
For ultra-gooey centers, err on the lower end of the baking time.
-
Add a sprinkle of flaky sea salt on top before baking for a sweet-salty twist.
-
Double the recipe and bake in a 9×13-inch pan for a crowd.
