  • 14–16 oz smoked sausage, sliced into 1/2-inch rounds (kielbasa or andouille both work great)

  • 1 ½ lbs baby potatoes or Yukon Golds, cut into quarters or chunks

  • 1 bell pepper, sliced (any color — optional)

  • 1 small red onion, sliced (optional but flavorful)

  • 2–3 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika (smoked or sweet)

  • 1 tsp Italian seasoning (or dried thyme/oregano)

  • Salt and pepper, to taste

  • Optional: Fresh parsley for garnish


🔪 Instructions:

  1. Preheat oven to 400°F (200°C).
    Line a baking sheet with parchment paper or foil for easy cleanup.

  2. Prep ingredients:

    • In a large bowl, toss the potatoes, sausage, peppers, and onion with olive oil and all seasonings until well coated.

  3. Spread on baking sheet:

    • Arrange in a single layer for even roasting. Don’t overcrowd — use 2 pans if needed.
