For the chicken:

1/2 cup low-sodium soy sauce

1/3 cup honey or brown sugar

1/4 cup hoisin sauce (or extra soy sauce + honey if unavailable)

2 tbsp rice vinegar or apple cider vinegar

2 tbsp sriracha or chili garlic sauce (optional for heat)

2 cloves garlic, minced

1 tbsp grated fresh ginger (or 1 tsp ground)

1 tbsp sesame oil

1 tbsp cornstarch + 2 tbsp water (slurry to thicken sauce)

1. Add chicken & sauce to slow cooker:
Place chicken in the bottom of your slow cooker. In a bowl, whisk together soy sauce, honey, hoisin, vinegar, sriracha (if using), garlic, ginger, and sesame oil. Pour sauce over chicken.
2. Cook:
Cover and cook on:

3. Shred & thicken:
Remove chicken and shred with two forks. In a small bowl, mix cornstarch and water to make a slurry. Stir into sauce in the slow cooker. Return chicken and stir to coat. Let it cook on high for another 10β15 minutes to thicken the sauce.
4. Cook noodles:
Prepare noodles according to package directions. Drain and toss lightly with a bit of sesame oil to prevent sticking.
