Ingredients

For the Meatloaf:

  • 1½ lbs ground beef (80/20 blend recommended)

  • ½ lb ground pork (optional, for extra flavor)

  • 1 cup breadcrumbs

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 eggs

  • ½ cup milk

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons ketchup (plus extra for topping)

  • 1 teaspoon dried thyme or Italian seasoning

  • Salt and pepper, to taste

For the Caramelized Onion Gravy:

  • 2 large onions, thinly sliced

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 2 tablespoons all-purpose flour

  • 2 cups beef broth

  • 1 teaspoon Worcestershire sauce

  • Salt and pepper, to taste

1. Make the Meatloaf:

  • Preheat oven to 350°F (175°C).

  • In a large bowl, combine ground beef, ground pork (if using), breadcrumbs, chopped onion, garlic, eggs, milk, Worcestershire sauce, ketchup, thyme, salt, and pepper. Mix gently until just combined—don’t overwork.

  • Shape mixture into a loaf and place in a loaf pan or on a lined baking sheet. Spread a thin layer of ketchup on top.

  • Bake for 60–70 minutes, or until meatloaf reaches an internal temperature of 160°F (71°C). Let rest 10 minutes before slicing.

2. Make the Caramelized Onion Gravy:

  • While meatloaf bakes, heat butter and olive oil in a large skillet over medium-low heat. Add sliced onions and cook, stirring occasionally, until deep golden and caramelized, about 25–30 minutes.

  • Sprinkle flour over onions and stir to coat, cooking for 1–2 minutes to remove raw flour taste.

  • Gradually whisk in beef broth and Worcestershire sauce.

  • Simmer until thickened, about 5–7 minutes. Season with salt and pepper to taste.

3. Serve:

  • Slice the meatloaf and drizzle generously with caramelized onion gravy.

  • Pair with mashed potatoes, roasted veggies, or green beans for a classic comfort meal.

  • For extra moisture, soak breadcrumbs in milk before mixing.

  • Add chopped fresh herbs like parsley or rosemary for flavor boosts.

  • Make ahead: meatloaf can be shaped and refrigerated overnight, then baked next day.
