Here’s a quick, creamy, and flavor-packed dip you’ll want to make again and again: Irresistible Rotel Cream — a warm, cheesy, zesty blend that’s perfect for chips, tacos, nachos, or spooned over baked potatoes and burgers.


🌶️🧀 Irresistible Rotel Cream Dip

Ingredients (Serves 6–8):

  • 1 can (10 oz) Rotel (diced tomatoes & green chilies), undrained

  • 8 oz cream cheese, softened and cubed

  • 1 cup shredded cheddar or Mexican blend cheese

  • ½ cup sour cream

  • ½ tsp garlic powder

  • Optional add-ins:

    • ½ lb cooked ground beef, sausage, or chorizo

    • ¼ tsp cumin or chili powder for extra flavor

    • Sliced green onions or jalapeños for garnish


🔧 Instructions:

Stovetop Method:

  1. In a medium saucepan over medium-low heat, combine Rotel and cream cheese.

  2. Stir until cream cheese is melted and smooth.

  3. Add shredded cheese, sour cream, and seasonings.

  4. Stir until fully melted and creamy.

  5. Optional: Stir in cooked meat or extras at this point.

Microwave Method:

  1. In a microwave-safe bowl, combine all ingredients.

  2. Microwave in 30-second bursts, stirring in between, until everything is melted and smooth (about 3–4 minutes total).


✅ Serve With:

  • Tortilla chips, toasted baguette slices, soft pretzels

  • Over tacos, burritos, or nachos

  • As a topping for baked potatoes or fries
