Here’s a cheesy, crunchy, and crowd-pleasing Dorito Casserole — perfect for a quick weeknight dinner or potluck! It layers seasoned meat, creamy filling, and crushed Doritos for that irresistible taco-style comfort food flavor.


🔥🧀 Dorito Casserole

Ingredients (Serves 6–8):

  • 1 lb ground beef (or ground chicken or turkey)

  • 1 small onion, diced

  • 1 packet taco seasoning (or 2 tbsp homemade mix)

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained

  • 1 can (10.5 oz) cream of chicken or mushroom soup

  • ½ cup sour cream

  • 2 cups shredded cheddar or Mexican blend cheese, divided

  • 4–5 cups Nacho Cheese Doritos, crushed slightly


🔧 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.

  2. Cook the beef:

    • In a skillet over medium heat, cook ground beef and onion until browned.

    • Drain excess grease.

    • Stir in taco seasoning and Rotel, simmer for 2–3 minutes.

  3. Make the creamy filling:

    • In a bowl, mix the cream of soup, sour cream, and 1 cup of shredded cheese.

    • Add the beef mixture and stir to combine.

  4. Layer the casserole:

    • Spread half of the crushed Doritos in the bottom of the baking dish.

    • Pour the beef mixture over the chips and spread evenly.

    • Top with the remaining Doritos, then sprinkle with the remaining cheese.

  5. Bake:

    • Bake uncovered for 20–25 minutes, until hot and bubbly and cheese is melted.

  6. Serve:

    • Garnish with chopped cilantro, sliced green onions, diced tomatoes, or jalapeños if desired.

    • Great with sour cream or avocado on the side!

  • Add black beans, corn, or chopped bell peppers for extra texture and flavor.

  • Use Cool Ranch Doritos for a twist.

  • Leftovers reheat well in the oven or air fryer.
