Ingredients (Serves 2):

4 large eggs

3 tbsp mayonnaise (or Greek yogurt for a lighter option)

Salt and pepper, to taste

4 slices bread (white, whole wheat, or your favorite)

Boil the eggs:

Place eggs in a saucepan, cover with water, and bring to a boil.

Once boiling, turn off heat, cover, and let sit 10β12 minutes.

Drain and transfer eggs to ice water to cool.

Peel the eggs and roughly chop them.
