🍳🥔🧀 3-Ingredient Baked Breakfast (Egg, Potato & Cheese Bake)
Ingredients (Serves 2–4):

4 large eggs

2 medium potatoes, shredded (or use 2 cups frozen hash browns)

1 cup shredded cheese (cheddar, mozzarella, or your favorite)
🔧 Instructions:

Preheat oven to 375°F (190°C). Lightly grease a small baking dish or oven-safe skillet.

Prepare potatoes:

If using fresh potatoes, peel and shred them, then squeeze out excess moisture using a clean towel.

Spread the shredded potatoes evenly into the bottom of the dish. Season lightly with salt and pepper (optional).

Add cheese:

Sprinkle cheese evenly over the potatoes.

Crack eggs:

Crack the eggs on top of the cheese, keeping yolks whole or gently whisking them if you prefer a casserole-style bake.

Bake for 20–25 minutes, or until eggs are set and edges are golden. (For firmer yolks, bake a few minutes longer.)
