👩🍳 Instructions:
1. Make the batter:
-
In a large bowl, whisk together flour, sugar, baking powder, baking soda, nutmeg, and salt.
-
In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
-
Pour wet into dry and mix just until combined. Don’t overmix (a few lumps are fine).
2. Cook the pancakes:
-
Heat a nonstick griddle or skillet over medium heat. Grease lightly.
-
Pour ¼ cup batter per pancake. Cook until bubbles form on top and edges look set (2–3 min), then flip and cook another 1–2 minutes.
-
Keep warm while you make the rest.
3. Add your donut-style topping:
➡️ Classic cinnamon sugar:
-
Mix ¼ cup sugar + 1 tsp cinnamon.
-
Brush warm pancakes with melted butter, then dip or sprinkle with cinnamon sugar.
➡️ Powdered sugar:
-
Dust over warm pancakes like powdered cake donuts.
➡️ Vanilla glaze:
Mix:
-
¾ cup powdered sugar
-
1 tbsp milk
-
½ tsp vanilla extract
Drizzle over pancakes while still warm.
➡️ Chocolate glaze:
Mix:
-
¾ cup powdered sugar
-
2 tbsp cocoa powder
-
1–2 tbsp milk
-
½ tsp vanilla
Drizzle over pancakes and top with sprinkles.
💡 Tips:
-
Add sprinkles or mini chocolate chips to the batter for a funfetti donut effect.
-
Want them more “cakey”? Use 2 eggs instead of 1.
-
Serve with coffee or a cold glass of milk for the full donut shop feel.
