🥩 Beef and Gravy with Mashed Potatoes

Ingredients:

For the beef and gravy:

  • 2 lbs (900 g) beef stew meat, chuck roast, or sirloin tips, cut into chunks

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 cups beef broth (low-sodium preferred)

  • 2 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 2 tbsp flour or cornstarch (for thickening)

  • 2 tbsp butter or oil

  • Salt & black pepper to taste

  • Optional: fresh thyme, rosemary, or a bay leaf


For the mashed potatoes:

  • 2½ lbs Yukon Gold or Russet potatoes, peeled and cubed

  • 4 tbsp butter

  • ½ cup milk, warm (plus more as needed)

  • Salt to taste

  • Optional: sour cream or cream cheese for extra richness


🧑‍🍳 Instructions:

🔹 Step 1: Cook the Beef

Stovetop/Dutch Oven Method:

  1. Season beef with salt and pepper, and dredge lightly in flour (optional).

  2. In a Dutch oven, heat butter/oil over medium-high heat. Brown the beef in batches (about 2–3 min per side).

  3. Remove beef, add onion and garlic. Sauté for 3–4 min.

  4. Return beef to pot. Add broth, Worcestershire, soy sauce, and herbs if using.

  5. Bring to a simmer, cover, and reduce heat. Cook on low for 1.5 to 2 hours, or until beef is tender.

  6. Thicken gravy: Mix 1–2 tbsp flour or cornstarch with water. Stir into pot and simmer until thickened.

Slow Cooker Method:

  1. Brown beef and onions first (optional, but adds flavor).

  2. Add to slow cooker with garlic, broth, Worcestershire, and soy sauce.

  3. Cook on Low for 6–8 hours or High for 3–4 hours.

  4. Thicken at the end with a cornstarch slurry.


🔹 Step 2: Make the Mashed Potatoes

  1. Boil potatoes in salted water until fork-tender (about 15–20 minutes).

  2. Drain and mash with butter, milk, and salt.

  3. Add more milk for desired creaminess. Optional: stir in sour cream or cream cheese.


🥣 To Serve:

Spoon mashed potatoes into bowls or plates. Top with tender beef and plenty of rich gravy. Garnish with chopped parsley or cracked black pepper if desired.

  • Add mushrooms or carrots to the beef for extra depth.

  • Swap potatoes for egg noodles or rice.
