Pizza Enchiladas

Pizza Enchiladas are a fun fusion of two favorites: Italian pizza and Mexican enchiladas. Imagine soft tortillas rolled up with pizza toppings, smothered in marinara sauce, and baked with gooey cheese. Here’s a simple recipe to try:


🍕 Pizza Enchiladas Recipe

Ingredients:

  • 6 flour tortillas (medium size)

  • 1 cup pizza sauce or marinara

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup mini pepperoni slices (or chopped regular pepperoni)

  • ½ cup cooked Italian sausage (optional)

  • ¼ cup sliced black olives (optional)

  • ¼ cup diced bell peppers or onions (optional)

  • 1 tsp Italian seasoning

  • Red pepper flakes (optional)


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Prepare the filling:
    In a bowl, combine:

    • ¾ cup mozzarella cheese

    • Half of the pepperoni and sausage

    • Optional toppings like olives, peppers, etc.

    • A few tablespoons of pizza sauce

  3. Fill and roll:

    • Spoon some filling into the center of each tortilla

    • Roll them up like enchiladas and place seam-side down in a baking dish

  4. Top it off:

    • Pour the remaining pizza sauce over the rolled tortillas

    • Sprinkle with the rest of the cheese, pepperoni, and Italian seasoning

  5. Bake:

    • Cover with foil and bake for 15 minutes

    • Remove foil and bake another 10 minutes until bubbly and golden

  6. Serve:

    • Garnish with fresh basil, parsley, or more red pepper flakes

    • Serve hot with a side salad or garlic bread
