Tacos de Papa

Here’s a classic recipe for Tacos de Papa — crispy, comforting Mexican potato tacos that are simple, satisfying, and perfect for any meal!


🌮🥔 Tacos de Papa (Potato Tacos)

Ingredients:

  • 4 large potatoes (Russet or Yukon Gold), peeled and diced

  • 2 tbsp vegetable oil (plus more for frying)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • Salt and pepper, to taste

  • 8 small corn or flour tortillas

  • Optional toppings: shredded lettuce, diced tomatoes, crumbled queso fresco, salsa, chopped cilantro, sour cream, sliced avocado, lime wedges


🔪 Instructions:

1. Cook the Potatoes:

  • Place diced potatoes in a pot and cover with water.

  • Boil until tender, about 12–15 minutes.

  • Drain well and mash coarsely (not too smooth).

2. Prepare the Filling:

  • Heat 2 tbsp vegetable oil in a skillet over medium heat.

  • Sauté onion until translucent, about 3-4 minutes.

  • Add garlic and cook 1 minute.

  • Stir in cumin, salt, and pepper.

  • Add mashed potatoes and mix well to combine.

  • Cook 5–7 minutes, stirring occasionally, until potatoes are slightly crispy and flavorful.

3. Assemble the Tacos:

  • Warm tortillas in a dry skillet or microwave.

  • Spoon potato filling onto each tortilla.

  • Fold tacos in half.

4. Optional Crispy Tacos:

  • Heat oil in a skillet over medium-high.

  • Fry assembled tacos 1–2 minutes per side until crispy and golden.

  • Drain on paper towels.

5. Serve:

  • Top with your favorite toppings like shredded lettuce, salsa, cheese, and a squeeze of lime.


🍽️ Serving Tips:

  • Pair with refried beans and Mexican rice for a full meal.

  • Add a spicy salsa roja or a creamy avocado sauce for extra flavor.
