4β5 cups potatoes, peeled and diced (Russet or Yukon Gold work great)

2 cups cooked ham, cubed

1 small onion, diced

1 can (10.5 oz) cream of mushroom or cream of chicken soup

1 cup sour cream
-
1 Β½ cups shredded cheddar cheese, divided

1/2 tsp garlic powder

1/2 tsp black pepper

1/4 tsp paprika (optional, for a bit of color)

Optional: 1/4 cup milk if you want it extra creamy

Optional: Chopped green onions or parsley for garnish

Prep the Crockpot:
Spray the inside of your slow cooker with nonstick cooking spray. -
Combine Ingredients:
In a large bowl, mix together the cream soup, sour cream, half the cheese, garlic powder, pepper, and paprika (and milk if using). Stir in the diced potatoes, ham, and onions. -
Load the Crockpot:
Pour the mixture into the crockpot and spread evenly. -
Cook:
Cover and cook on LOW for 7β8 hours or HIGH for 4β5 hours, until potatoes are tender. -
Add Cheese & Finish:
In the last 15β30 minutes of cooking, sprinkle the remaining cheese over the top. Cover and let it melt. -
Serve:
