  • 4–5 cups potatoes, peeled and diced (Russet or Yukon Gold work great)

  • 2 cups cooked ham, cubed

  • 1 small onion, diced

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • 1 cup sour cream

  • 1 Β½ cups shredded cheddar cheese, divided

  • 1/2 tsp garlic powder

  • 1/2 tsp black pepper

  • 1/4 tsp paprika (optional, for a bit of color)

  • Optional: 1/4 cup milk if you want it extra creamy

  • Optional: Chopped green onions or parsley for garnish

  1. Prep the Crockpot:
    Spray the inside of your slow cooker with nonstick cooking spray.

  2. Combine Ingredients:
    In a large bowl, mix together the cream soup, sour cream, half the cheese, garlic powder, pepper, and paprika (and milk if using). Stir in the diced potatoes, ham, and onions.

  3. Load the Crockpot:
    Pour the mixture into the crockpot and spread evenly.

  4. Cook:
    Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until potatoes are tender.

  5. Add Cheese & Finish:
    In the last 15–30 minutes of cooking, sprinkle the remaining cheese over the top. Cover and let it melt.

  6. Serve:
    Top with chopped green onions or parsley if desired.

  • Add frozen peas, corn, or broccoli for a veggie boost

  • Use smoked gouda or Monterey Jack for a twist on the cheese
