Twice Baked Potatoes

Here’s a classic recipe for Twice Baked Potatoes — creamy, cheesy, and loaded with all the best toppings. Perfect as a hearty side or even a main dish!


🥔 Twice Baked Potatoes

🕒 Bake Time: 1 hour
🍽️ Serves: 4


🧂 Ingredients:

  • 4 large baking potatoes (Russet work best)

  • 4 tbsp butter

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese, divided

  • 1/4 cup milk (or more as needed)

  • 4 slices bacon, cooked and crumbled (optional)

  • 2 green onions, sliced

  • Salt & pepper, to taste


🔪 Instructions:

  1. Bake Potatoes:
    Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork and bake directly on the oven rack for 45–60 minutes until tender.

  2. Prepare Filling:
    When potatoes are cool enough to handle, cut each in half lengthwise. Scoop out the insides, leaving a 1/4-inch shell.

  3. Mix Filling:
    In a bowl, mash the potato flesh with butter, sour cream, 1/2 cup cheese, milk, salt, and pepper. Stir in bacon and green onions, reserving some for topping.

  4. Stuff Potatoes:
    Spoon the filling back into the potato shells. Top with remaining cheese and reserved bacon/green onions.

  5. Bake Again:
    Place potatoes on a baking sheet and bake for another 15–20 minutes until cheese is melted and golden.


🍴 Serving Ideas:

  • Serve with a dollop of sour cream or ranch dressing.

  • Add extra toppings like jalapeños, broccoli, or diced tomatoes.
