Rolled Taquitos fresh Salsa and Guacamole.. Dinner

Hereโ€™s a delicious Rolled Taquitos Dinner complete with fresh salsa and guacamole โ€” a crunchy, flavorful, and colorful meal perfect for any night!


๐ŸŒฎ Rolled Taquitos Dinner with Fresh Salsa & Guacamole

๐Ÿ•’ Cook Time: 20โ€“25 min
๐Ÿฝ๏ธ Serves: 4


๐Ÿง† Part 1: Rolled Taquitos (Baked or Fried)

๐Ÿง‚ Ingredients:

  • 2 cups cooked shredded chicken, ground beef, or beans

  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • Salt & pepper, to taste

  • 12 small corn tortillas

  • Oil, for brushing or frying

๐Ÿ”ช Instructions:

  1. Prepare Filling:
    In a bowl, mix chicken/beef/beans with cheese, cumin, chili powder, salt, and pepper.

  2. Warm Tortillas:
    Wrap tortillas in a damp towel and microwave for 30 seconds to make them pliable.

  3. Roll Taquitos:
    Place 2โ€“3 tbsp of filling on one end of each tortilla. Roll tightly and secure with a toothpick if needed.

  4. Cook Options:

    • Air Fryer: 375ยฐF for 10โ€“12 min, flipping halfway.

    • Bake: 425ยฐF for 18โ€“20 min, brush with oil beforehand.

    • Fry: Shallow fry in oil until golden and crispy.


๐Ÿ… Part 2: Fresh Salsa

๐Ÿง‚ Ingredients:

  • 4 ripe Roma tomatoes, diced

  • 1/4 small red onion, finely chopped

  • 1โ€“2 jalapeรฑos, seeded and minced

  • 1 clove garlic, minced

  • Juice of 1 lime

  • 2 tbsp chopped cilantro

  • Salt, to taste

๐Ÿ”ช Instructions:

  1. Mix everything in a bowl.

  2. Chill 15โ€“20 minutes to let flavors meld.

  3. Adjust salt and lime to taste.


๐Ÿฅ‘ Part 3: Guacamole

๐Ÿง‚ Ingredients:

  • 2 ripe avocados

  • 1 small tomato, diced

  • 1 tbsp finely chopped onion

  • 1 tbsp lime juice

  • 1 tbsp chopped cilantro

  • Salt, to taste

๐Ÿ”ช Instructions:

  1. Mash avocados in a bowl (chunky or smooth).

  2. Mix in tomato, onion, lime juice, cilantro, and salt.

  3. Taste and adjust seasoning.


๐Ÿฅ— Suggested Sides:

  • Mexican rice

  • Refried beans or black beans

  • Tortilla chips for dipping

Plate 3โ€“4 taquitos per person, top with a drizzle of sour cream or crema, serve with a scoop of guac and a side of salsa. Garnish with cilantro and lime wedges.
