Chicken and Potato Bake

Here’s a cozy, all-in-one Chicken and Potato Bake recipe — juicy chicken, tender potatoes, and flavorful seasonings baked together in one dish. Easy to prep, minimal cleanup, and perfect for weeknights!


🍗 Chicken and Potato Bake

🧂 Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs or breasts (cut into large chunks)

  • 1.5 lbs gold or red potatoes, cut into 1-inch cubes

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 teaspoon Italian seasoning (or dried thyme/rosemary)

  • 1/2 teaspoon onion powder

  • Salt & pepper to taste

  • 1/2 cup shredded cheddar or mozzarella (optional, for topping)

  • 1 tablespoon chopped parsley or green onions (optional garnish)


🔥 Instructions:

1. Preheat Oven:

  • Preheat to 400°F (200°C).

  • Lightly grease a 9×13-inch baking dish or casserole dish.

2. Season the Chicken & Potatoes:

  • In a large bowl, toss chicken and potatoes with olive oil and all the seasonings.

  • Make sure everything is evenly coated.

3. Bake:

  • Spread the mixture evenly in the prepared baking dish.

  • Bake covered with foil for 30 minutes.

4. Uncover & Finish Baking:

  • Remove foil, stir gently, and return to oven uncovered for another 20–25 minutes, until chicken is cooked through (165°F internal temp) and potatoes are golden and tender.

5. Add Cheese (Optional):

  • Sprinkle cheese on top during the last 5 minutes of baking if desired.

  • Broil for 1–2 minutes for a golden cheesy finish.

6. Rest & Serve:

  • Let sit for 5 minutes before serving.

  • Garnish with fresh herbs.


🥦 Add-Ins & Variations:

  • Toss in broccoli florets, bell peppers, or zucchini during the last 20 minutes.

  • Swap potatoes for sweet potatoes for a sweeter twist.

  • Add a splash of lemon juice or balsamic vinegar before baking for brightness.
