For the Pie Crust (makes 2 crusts):
-
2 1/2 cups all-purpose flour
-
1 tsp salt
-
1 tsp sugar
-
1 cup (2 sticks) unsalted butter, cold and cut into cubes
-
6-8 tbsp ice water
For the Filling:
-
6-7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and thinly sliced
-
3/4 cup granulated sugar
-
1/4 cup brown sugar
-
2 tsp ground cinnamon
-
1/4 tsp ground nutmeg
-
1/4 tsp salt
-
1 tbsp lemon juice
-
2 tbsp all-purpose flour (for thickening)
-
1 tbsp unsalted butter, cut into small pieces (for dotting)
For Assembly:
-
1 egg, beaten (for egg wash)
-
1 tbsp sugar (for sprinkling)
Instructions
1. Make the Pie Crust:
-
In a large bowl, whisk together flour, salt, and sugar.
-
Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
-
Gradually add ice water, 1 tbsp at a time, mixing just until dough comes together.
-
Divide dough in half, shape each into a disk, wrap in plastic, and refrigerate for at least 1 hour.
2. Prepare the Filling:
-
In a large bowl, toss sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, salt, lemon juice, and flour. Set aside.
3. Assemble the Pie:
-
Preheat oven to 425°F (220°C).
-
Roll out one dough disk on a lightly floured surface into a 12-inch circle. Fit into a 9-inch pie pan.
-
Pour apple filling into the crust, spreading evenly. Dot with small butter pieces.
-
Roll out the second dough disk and place over the filling.
-
Trim excess dough, crimp edges to seal, and cut vents in the top crust for steam to escape.
-
Brush the top crust with beaten egg and sprinkle with sugar.
4. Bake the Pie:
-
Bake at 425°F for 15 minutes.
-
Reduce oven temperature to 350°F (175°C) and bake for an additional 35-45 minutes, or until crust is golden and filling is bubbly.
-
If crust browns too quickly, cover edges with foil.
5. Cool and Serve:
-
Let the pie cool at least 2 hours to set before slicing.
-
Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
